Znoud el Zet/ Phyllo Cream Lady Fingers



Recipe:

1 cup Whole Milk

1 cup Heavy Cream

1 tbsp sugar

2 tbsp corn starch

1 tsp rose water

1/2 tsp orange blossom

1 package phyllo dough

1 stick unsalted butter

1/4 cup pistachios, chopped (optional)

simple syrup


Directions:


  1. Place whole milk, heavy cream, sugar, and corn starch in a sauce pan. Mix the ingredients well and place over medium heat while mixing. Continue to mix until the mixture thickens. Note: it's important to continue mixing to avoid the mixture from burning on the bottom.

  2. When thickened add the rosewater and orange blossom and mix. Lift from heat and place directly in a pyrex pan then cover with a food safe plastic wrap. We cover it to avoid a thick layer. Allow it to cool completely.

  3. Melt the butter in a microwave or over the heat in a sauce pan.

  4. Place 2 sheets of phyllo dough into a cross, brush with melted butter, and spoon cream.

6. fold the sides and wrap into a tube like.

7. Place in a buttered pan and brush with butter.

8. Bake in a 400 Fahrenheit oven until golden.

9. Allow to cool for 15 min. then drizzle with simple syrup and chopped pistachios


Simple syrup recipe:


2 cups granulated sugar

1 cup water

1 tsp lemon juice

1/2 tsp orange blossom

1/2 tsp rosewater


Directions: place sugar and water in a sauce pan on medium heat. Allow to boil for 5 min. then place lemon juice and simmer for 10 min. so it can thicken. Add orange blossom and rose water, mix and place on the side to cool.
