Guacamole Salad
On a hot summer day, all I want is a refreshing salad.
Ingredients: (serves 3 people)
1 Roman Lettuce, chopped
2 Cucumbers, chopped
2 Tomatoes, chopped
1 small purple onion, sliced
10 olives, pitted
1/2 cup corn or 2 corn on the cob, grilled
1 green pepper, sliced
2 Ripe Avocados
Dressing:
1/4 cup Cilantro, minced
2 tbsp Olive Oil
2 tbsp Lemon Juice (can be adjusted to taste, start with 1 tbsp)
1/4 tsp black pepper
1/2 tsp salt
Directions:
1. Prepare dressing beforehand and place in a bowl or mason jar on the side. Mix well.
2. Chop and slice all vegetables as directed above, and place in a bowl.
** I highly recommend grilling corn cobs on a gas stove top and then slicing them on a cutting board to top with your salad. Alternatively, canned corn will also taste great.
3. Make sure the avocados are ripe. A ripe avocado will give a delicious creamy texture to the salad when mixed. Slice the avocado in half around then pit (inside seed), then with a knife, gently press into the seed, turn counter clockwise and the seed should be released.
Remove the avocado inside and slice to create a design as above or cut into cubes and add to your salad.
4. Add dressing to salad and mix well.
This is a salad, so you are welcome to add, remove, and adjust dressing amounts to your liking.
