Spinach and Feta Phyllo Borek
Every time I went to the grocery store (I don't go often) I would pick up a Spinach and Feta spiral. But I never enjoyed it cold neither did I like the uncooked middle part. So I decided to start making it at home and it is much better than the store bought version. At least I can add more heart desire of cheese!!
Ingredients: 1 package Phyllo Dough 1 medium yellow onion, diced 1 tablespoon olive oil 15 oz. Fresh baby Spinach 1 1/2 tablespoon fresh dill, minced OR 1 tsp dill weed 1/3 cup parsley, minced 1 cup feta cheese (or more to your hearts desire) 1/4 tsp black pepper Salt (optional there is salt in the butter and feta) 1 stick salted butter, melted 1 tablespoon of sesame seed and black seed (fennel flower), optional
Directions:
1. Take out the phyllo dough and let it come to room temp. inside the package covered.
2. Dice onion and saute in a pan with olive oil on low heat until it's tender for about 8 min. It will further cook with the greens and in the oven later.
3.Finely mince (like tabouli mince) the dill and parsley.
4. Add spinach over the onions and turn up the heat to medium-low.
Note: Keep mixing the spinach so that all greens can get tender. If there is excess water while cooking the spinach, drain it in the sink by pushing a spoon against the spinach and letting the water fall from the pan.
5. Reduce the heat and add minced herbs, mix well. Then add the feta cheese.
6. Allow the mixture to cool. Then add salt and pepper.
7. Melt butter in a sauce pan over low heat until your whole block of butter is liquid.
Pre-heat oven to 375 Fahrenheit
8. Lay the phyllo dough open flat on a clean surface. Place 1 sheet and lightly brush with butter. Repeat 2 more times. 3 sheets in total. ** keep the unused phyllo dough sheets covered under a damp towel so make sure they don't dry and crack.
9. Lay the spinach and feta mixture horizontally on the long end of the phyllo sheets smeared in butter.
10. Roll up until you get a long log and shape into a heart shape.
11. Brush a baking pan with melted butter. And place the phyllo rolls on the pan then generously brush the top with butter. Top with sesame seed and black seed (optional).
12. Place the pan in the oven on the middle rack for 30 min. until golden brown.
13. Broil for 2 min. on low to get a crispy top.
14. Remove from oven and place on a cooling rack for 10 min. Enjoy! With a cup of tea ❤
