Chicken Pie, it's not Lebanese but why not?!?
Ingredients:
This will make 2 chicken pies and if your a family of 7, you need two pies.
2 Lbs Chicken Tenders, Cleaned and cut into cubes
2 packages of Pie Crust (the one for apple pie, not phyllo)
1 Green Pepper
1 Yellow Onion
1 Tomato
1/2 Can of Corn
1 cup Green Peas
2 Carrots, cut into small cubes
2 large Garlic cloves, crushed
2 Tablespoon Canola Oil
1 Teaspoon Taco Seasoning
Salt
Pepper
1/2 Teaspoon Crushed Pepper
1/2 cup of Parmesan Cheese
1/2 cup of Fancy Blend Cheese (Shredded Cheddar and Mozzarella)
1 cup Light Cream
1 Egg (for egg wash)
Directions:
1. Turn on the oven to 425F, or follow package instructions for baking.
2. In a pan cook the Chicken with some Canola oil, until all the chicken is white
3. Chop the pepper, onion, tomato, carrots, and crushed the garlic in another pot, add all the vegetables with 2 tablespoons of canola oil and saute well.
4. Add the green peas and corn (must be drained).
5. Add all the seasoning and saute. Seasoning can be based on desire if you like it spicy add more taco seasoning and crushed pepper, if not decrease the amount.
6. Now add the cooked chicken to the vegetables.
7. Add the cheese and light cream and mix well!
8. Don't over heat because it will then dry, just so the light cream actually becomes creamy.
9. In a round pyrex glass pan, place one layer of your pie. like this!
9. Put the top layer on it and press the sides.
10. with a knife make a shape and lines on the top layer so you wouldn't have a bubble in your pie! Be Creative!
11. Get an egg, mix the egg. Give your pie a gentle egg wash with a cooking brush.
12. It will take about 35 minutes in the oven, then place the pie on the lower shelf of the oven and broil for 5 min.
