Halawet Al Jabin


Ingredients:

1 cup of water

1/2 cup of sugar

1 cup soft semolina

2 cups of shredded mozzarella cheese

2 teaspoons of Orange Blossom Water

Directions:

1. In a deep pan or pot: add the water and sugar together, mix and bring to a boil.

2. Add the cup of soft semolina and mix. The semolina has to be soft!

3. Gradually add the 2 cups of mozzarella cheese and mix well until all the cheese is melted.

Note: might take a while, keep mixing!

4. Add the orange blossom water at the end when the cheese melts. and mix!

5. Now on a flat table place a plastic wrap, almost 16 inches. Place a bit of canola oil on it and smear it.

6. Place the Halawet al Jabin on it (make sure it's still hot, don't wait till it gets cold), place another plastic warp on top, same size.

7. With a rolling pin start rolling the halawet al jabin between the wrap until it's about 1 cm.

For filling you can make Ashta:

mix in a pot: 1 cup of light cream, 1 cup of whole milk, sugar, 2 toast bread (remove the sides), and orange blossom.
