Chicken Kabse


Gulf dish with some Lebanese love!

Directions:

1. Grab 2 cups of rice, wash, and soak in water.

2. If using a Whole Chicken, you need to boil it. Place your clean chicken in a pot, fill with fresh water until it covers chicken. Add: 1 cinnamon stick, a piece of fresh ginger, 1 teaspoon of All 7 spice, 2 bay leaves, and 2 cardamom pods.

Time: If using whole chicken it might need an hour to become tender. For chicken breasts, it will need half an hour.

Tip: Make sure your chicken is clean, before placing in pot. Scrub it with half a lemon all over and let it soak in water for a bit, then wash again with cold water.

3. When chicken is done boiling place on a tray in the oven and turn on Broil until the chicken is golden brown and crispy! Should take 10 min.

When chicken is boiling, make the rice:

1. Chop finely: onion, pepper, and carrot.

2. Now place in a pot with 2 tablespoons of canola oil and Sauté on medium heat. Crush the garlic over the vegetables and mix. Add the peas.

3. Grab the two tomatoes, and cut in half. Now using a grater (picture below), place the inside of the tomato on the grater and shred to make the juice. But! Don’t shred the skin of the tomato, throw it away.

4. Place the fresh tomato juice over the sautéed vegetables.

5. By now the vegetables should be tender.

6. Add 1 tablespoon of Kabsa spice. Add salt to taste, mama doesn’t add salt cause she likes to keep the sodium low in this house.

Note: if you don’t have it, it can be easily purchased online. Aim for the red-organey kind. It’s a complicated and delicious blend, but if you searched profoundly you might find the basics!

7. Drain rice and add over the vegetables. Mix well. Add fresh water or the chicken broth until the rice is soaked.

8. Cook until rice is tender.

Garnish:

Yes … it’s VERY important

1. In a pan, turn heat on high and add one tablespoon of canola oil.

2. Add in pan: pine nuts, almonds, and cashews. Don’t bother with pistachio, save it for another recipe!

Note: nuts must be skinless and clean

3. Keep mixing over high heat until golden brown.

4. Place on a plate with a piece of towel until drained from oil.
