Lebanese Spinach Pies
it's a pie, but a Lebanese kind of pie!
Recipe:
This recipe makes 6 medium spinach pies. You will have leftover dough to make a medium pizza or 6 more spinach pies if you double the spinach filling.
1 dough recipe
12 oz. fresh raw baby spinach, washed, drained and dried
1/2 cup yellow onion, finely diced
2 tsp sumac
1 tsp Lebanese 7 spices
1/4 cup olive oil
2 small lemon juice
1 tsp salt
Canola or any cooking oil for baking
Directions
1. In a large bowl add the baby spinach.
Make sure: the baby spinach must be thoroughly clean. If you see any dirt in the spinach, carefully clean it with cold water and let it sit to drain. Don’t press it.
2. Mince the yellow onion into very thin square pieces. Squeeze the lemon and then add the 7 spices, sumac, and olive oil all on the clean baby spinach. Sprinkle the salt.
Tip: to mince thin onion slices, use a small blender or hand chopper to chop the onions.
3. Let the spinach filling sit for 1 hour in the fridge. The lemon juice will help extract the water from the spinach.
Make it: preheat the oven to 450 F or 230 C
4. Prepare the dough by following the steps in our dough post!
5. Use another bowl with a sieve and place the spinach filling in the sieve to extract all the liquid. Around 1 cup of liquid will come out. This helps from making a moist dough when baking the pies.
6. Flour your surface and roll the dough into a thin round circle that is about 5 inches wide in diameter.
Fill the dough with generous amount of the spinach filling. Remember spinach wilts while it's being cooked.
7. Now close it! Here's how: bring some flour to your fingertips. On the middle end of either side of the circle close to the top. Then close the ends. Bring the third side to the middle. Make sure all three lines are closed tight.
8. Add two tablespoons of canola oil on a large oven baking pan, and spread the oil all over.
9.Place on the spinach pies on the pan and brush the top of the pies with more oil, lightly.
Preheat oven to 400 Fahrenheit
10.Place the spinach pie pan on the lower shelf of the oven, and bake for 6 min or until the bottom is golden brown, move to the top of the oven and broil for 5 min or until golden brown.
Tip: if you want to check the bottom of the pie, lift it with a fork.
Note: let the pies cool for 5 minutes before eating.
